Pumpkin Buttermilk Waffles

Last night, I was really domestic and made some Pumpkin Buttermilk Waffles!!  Although, I do have to admit that I didn't have a waffle iron, and I had to borrow one from a dude.  Does that make me less domestic?  I'm going to say that it's cancelled out by the fact that the waffles were made entirely from scratch.

Pumpkin Waffles
Adapted from several sources

2 1/2 cups all-purpose flour
1/3 cup packed light brown sugar
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
4 large eggs, separated
2 cups well-shaken buttermilk
1 cup canned solid-pack pumpkin
3/4 stick (6 tablespoons) unsalted butter, melted
Vegetable oil for brushing waffle iron or cooking spray

Preheat oven to 250°F and preheat waffle iron. Sift together flour, brown sugar, baking powder and soda, salt, and spices. Whisk egg yolks in a large bowl with buttermilk, pumpkin, and butter until smooth. Whisk in dry ingredients just until combined.
In a mixing bowl with a whisk attachment, whisk the egg whites until they hold soft peaks (as in, far softer than the over-beaten whites you’ll see in my picture above). Folk them gently into the waffle batter, until just combined.
Brush waffle iron lightly with oil and spoon batter (about 2 cups for four 4-inch Belgian waffles) into waffle iron, spreading quickly. Cook according to manufacturer’s instructions.
Transfer waffles to rack in oven to keep warm and crisp. Make more waffles in same manner.

In other news, I unpacked yesterday from a brief less than 24-hour trip home.  AKA I unpacked the same day I got home!! Gotta record this, because I'm preeeetty sure it won't happen again any time soon. #alwaystakes1weektounpackfroma1daytrip

Paige Takes A Fall

After/while being dropped off from the Bon Iver concert, I had this distinct feeling that I needed to check on Paige.  I walked into my house, noticed that she wasn't there, and gave her a ring.  My roommate answered, and over screaming in the background said that there had been an accident (everyone was at my friend's house watching the BYU vs. U of U football game).

Very long story made very short, Paige broke her ankle.  Fortunately, I have the best friends in the entire world, and they were able to get her ready for the hospital while I rushed on over to meet them.  I feel so blessed to have so many friends in med school who were able to care for her in a way that I was unable to.  Eve is a rockstar and stayed by our sides the whole time, until after 4 AM!!! My parents rushed down from Philly and joined us at around 3:30.  

Let's see if my parents let her down to visit again...you know, since I broke her this time.

Bon Iver!

Bon Iver played at Merriweather Post Pavillion this weekend, and they were AMAZING!!!! I've been looking forward to this concert for what feels like ages (read: like 2 months), and was so excited when the big night came.  It felt like Christmas! Everything about it all was so great, I didn't want it to end!

Caige Takes D.C.: Museums

Saturday morning, Paige and I slept in (I didn't get up until 6:57! Woo!), and hit up some museums and stuff.
